Description of the food & ingredients: I used cocoa butter instead of coconut butter. I wasn’t able to find it at the store. I used less cocoa butter to make the ganache a pudding consistency and more water. For garnish, I sprinkled the rest of the filling over the pudding. Also, one scoop of turmeric orange blossom honey and sea salt on top.

Detail & technique of the plating rationale:

The plate has height from pudding as I filled a cup and flipped it on a plate, and scoop of honey gave height for the dish. I focused on the dish centered in the canvas area, and cleaning the frame and rim as much as possible. The color of the yellow honey, brown filling topping, and white sea salt on top complement each other and the dish.

The sweet & acidic flavor of the honey and salty taste of the sea salt as garnish balanced out the bitter cocoa flavor in the dish.

Description of the food:

Ingredients: two slices of bread, two poached eggs, and sliced yellow tomato, parsley, onion & marmite yeast extract for garnish.

Detail & technique of the plating rationale:

The plate has height from two slices of bread, and stacking garnish and ingredients on top. I focused on the dish centered in the canvas area, and cleaning the frame and rim as much as possible. The color of the yellow tomato, green parsley, and yellow hollandaise sauce complemented each other.

The umami flavor of the sweet tomato and sweet taste of the onions, salty taste of marmite balances out the protein in the dish.

Note: the hollandaise sauce was viscous when I made it. Once I drizzled it on the plate it looks like it split. I think I might have waited too long to put it on the plate. The egg yolks from the poached egg mixed with sauce which made it a little watery.
